Potato Soup

I love this stuff. I make it 2-3 times a year.


4 medium potatoes
1 small onion
4 green onions
1 clove garlic (optional)
3 tbsp. butter
3 cups chicken broth
3/4 cup whipping cream (not whipped cream)
1 cup milk
Salt & Pepper
Nutmeg (optional)

Cut potatoes and onions into eights. Chop green onions and garlic and add, along with chopped onions, to butter in a 3-quart saucepan. Saute for 1 minute. Add potatoes and chicken broth. Cook until potatoes are done. Puree in food processor or blender. If using a blender, you may need to do this in batches. Pour into bowl and add whipping cream. Add salt, pepper and nutmeg to taste.

I made this last night and used 4 large potatoes and it came out as very creamy mashed potatoes. So small-medium potatoes for soupy texture and large for very creamy. Either way, it's very good.
