Holiday Recipes

My Mom made these for Thanksgiving and I thought I'd share them in case anyone was looking for something to make for Hanukkah or Christmas. Real simple and pretty damn good.

Ham-Noodle Casserole
Pretty good dish. The celery and mushrooms are optional. They don't really add anything to it.

1 can (10 oz) Cheddar cheese soup, undiluted
1/2 cup milk
1/2 cup sour cream
1/2 cup sliced celery
1 can (2 1/2 oz) sliced mushrooms, drained
2 cups diced ham
3 oz uncooked egg noodles
3/4 cup crushed Ritz crackers
1 tbs butter, melted

Combine Cheddar cheese soup, milk and sour cream in large bowl. Add celery and mushrooms. Stir in ham and cooked noodles. Pour into medium casserole dish. Combine cracker crumbs and butter in small bowl; sprinkle over dish. Baked, uncovered, 30 minutes or until hot at 375.

Potato Casserole
I guarantee this will be gone.

2 lbs frozen hash brown potatoes
2 cans (10 oz each) cream of chicken soup
1 pint sour cream
10 oz. shredded cheddar cheese

Thaw hash browns and combine all ingredients in a large bowl. Move to large casserole dish and bake 1 - 1 1/2 hours at 350.
